The Yuki Tsubaki Koshihikari rice is cultivated in an alpine region of the Niigata prefecture. The glacier water in the region is renowned for its rich minerals. It is with this water that Yuki Tsubaki grow their rice. The soil is prepared with great attention and cost, as they wait for the snowmelt to fill the rice fields. In order to maintain the taste of the rice, rice is dried using dehumidified air before it is slowly polished using milling equipment that does not apply heat during this process. The end result is a rice that is uniform and glossy.
This rice is best cooked in a rice cooker or earthenware pot (donabe). When cooked, the grains maintain a soft, fluffy texture. It is a fragrant rice with a natural sweetness and a clean, fresh flavour. Excellent for chazuke, onigiri, kamameshi and sushi.
