In 2019, in the midst of the Covid-19 pandemic, Jon Bussell began pickling to complement his charcuterie business. He was soon won over to the power of ferments and so Acide™ was born.
A commitment to flavour, preserving the seasons and reducing food waste are at the heart of the Acide™ philosophy.
This is a traditionally made kimchi — fresh wombok, gochugaru chilli flakes, garlic, ginger and fish sauce to round it out.
A perfectly balanced flavour hit that is liable to bubble straight out of the jar.
