Tamarind adds an appetising tang and fruity background flavour to curries, sour soups and sauces.

To make Tamarind water, take a walnut-sized piece from the block and soak it in two tablespoons of hot water for ten to fifteen minutes. Strain off the liquid, leaving behind the remaining seeds and pulp.
