Light Soy Sauce (Igeta Usukuchi Shoyu)

Usukuchi means “light-tasting”. It is a young soy sauce, aged for a shorter time than dark shoyu. In this case, aged for 1.5 years.

Light soy sauce has a saltier taste than dark soy, even though it has less salt, and is not quite as much flavour as dark soy. They are not interchangeable for each other.

This is a traditional shoyu best used for finishing or seasoning.
