Ortiz Sardines in Olive Oil

Ortiz Sardines are produced using time honoured fishing methods and curing techniques. The sardines are fished between August and November by line and preferably at dawn, to guarantee their best flavour.

They are prepared, a la Antigua (the old way), a process that leaves the fish tender from cooking with skin and bones still on, resulting in a sardine with a soft, delicate but meaty texture.

Conservas Ortiz was founded more than 100 years ago and is established in the small fishing village of Ondarroa, located in the North of Spain, on the Cantabrian Coast on the Bay of Biscay.
