Shaved Smoked Bonito (Hongare Katsuobushi)
Shaved from premium Katsuoboshi (Bonito Tuna). The Katsuoboshi is whole hand-cut, simmered and smoked skipjack tuna fillets that have been fermented and dried.
Katsuoboshi (along with Konbu) is an essential ingredient for making Dashi (stock), a foundational preparation used widely in Japanese cookery. It is also used as a garnish in many vegetable dishes – the little waving flakes on okonomiyaki, for example – as well as an accompaniment with pickles.
