Dried Bonito Vinegar
This vinegar is a rice vinegar mixed with bonito, soy sauce and mirin, imparting a sweet, smooth smokiness with the subtle flavours of the sea.
In Japan, this is a traditional dressing for all seafood, including crab, lobster and all types of fish. But the flavour profile lends itself to many other preparations such as dressings, sauces and dumplings.
This is not a vinegar that is easily produced. The maker, Tobaya Suten, emphasises the importance of strictly adhering to processes in producing this sophisticated vinegar, which has been made the same way for 300 years. One of these processes, 'Kaiire', requires the vinegar mash to be mixed by hand using a special oar.
