Many buckwheat noodles available for sale are a mix of buckwheat and wheat flour and are therefore not suitable for those on a gluten-free diet. These noodles are made from 100% Japanese buckwheat and have a texture and aroma not present in all soba noodles.
This high-quality buckwheat soba makes delicious, boiled soba water – Soba-yu. Soba-yu is traditionally served toward the end of the meal, after one has finished eating their soba noodles.
Serve cold noodles with a dipping sauce or add hot noodles to a bowl of miso soup.
Cook Soba Noodles in rapid boiling water for 6 minutes Drain then rinse well with fresh cold water and drain again.
