Wholegrain Freekeh
The word freekeh has its roots in the Arabic word “faraka”, meaning to rub, which refers to the traditional method of rubbing the husk away from the dried wheat. It is an ancient grain made from young, green wheat that is traditionally roasted over wood fires to burn off the husks, which gives the grain a lovely nutty flavour. It is incredibly high in fibre, high in protein and is low on the G.I. Index.
Use in grain salads or add to soups in the same way you would pearl barley.
